Primal Atlanta
Back in November we were invited to furnish the beef for Primal Atlanta, a celebration of the culinary arts appreciation of wood fired cooking, butchers, chefs, and whole animal utilization. The event, sponsored by the Georgia-based Taste Network, was held at SweetWater Brewing Company and attended by more than 500 Atlanta area foodies.
It was an awesome experience for Di and I to interact with people so interested in knowing where their meat products originate, how the animals have been raised, what they’ve eaten, and if they were treated humanely, etc. These people paid $55 apiece ($110 for the VIP tickets) to observe each specie (cattle, hogs, lambs, goats & poultry) be fabricated (by Master Butchers), prepared and cooked (by some of Atlanta’s top chefs) and then consumed on site.
I had the privilege to address the crowd about us/our operation and when I described the Multi-Species, Eco-Friendly, New-Generation, Meat Processing Facility initiative in Carroll County. They went absolutely nuts - clapping/cheering/screaming. I felt like a rock star! This experience only reinforced our belief that the timing for this project is excellent.
Meat Processing Facility
Though slower than we’d prefer, our Multi-Species, Eco-Friendly, New-Generation Meat Processing Facility Initiative continues gaining momentum. I have to continually remind myself that what we’re proposing has never been done in North America and therefore is going to encounter previously unidentified issues. We are however extremely optimistic the project is going to happen and are most grateful to have the full support of both elected and community leadership for our area. We’re fully convinced this model is the future of meat animal processing in the U.S.
2010 Optimism
We are extremely optimistic about the prospects 2010 offers. There are numerous positive indicators in our operation as we begin the New Year. Please stay tuned to our website and as the year unfolds, we will share our happenings with you.
